And when we got home, we couldn't stop thinking about them...so we decided to boil some ourselves for our fifth anniversary.<br />

Snow crab legs may be more expensive than your usual dinnertime fare, but we were actually pretty impressed by the price; we bought a whole bag for $10. New potatoes and corn are about as cheap as it comes, so all in all, we spent less on this fancy dinner than we might going out for fast food.<br />
<br />
Because it was our fifth anniversary, we also sprung for a fancy dessert: cupcakes made by the same lady who made our original wedding cake!<br />
<br />
<b>Time: </b>30 minutes<br />
<b>Servings: </b>2<br />
<b>Ingredients</b>:<br />
<ul>
<li>About one pound of crab legs (pictured below are King crab legs, but we actually preferred the snow crab for both taste and value).</li>
<li>1 tbsp. of Zatarain's liquid "shrimp and crab boil" (for a Cajun flavor)</li>
<li>5 tbsp. salt</li>
<li>four new potatoes</li>
</ul>

<b>Directions:</b> </div>

<ol>
<li>Bring about 2.5 quarts of water to a boil. </li>
<li>Add all of the ingredients to the pot and return to a boil for about 5-8 minutes.</li>
<li>Turn off the heat, and allow the crabs to continue to soak in the seasoning for an additional 10 minutes or so.</li>
<li>Serve with corn and cupcakes if desired.</li>

<li>1/3 cup of white cornmeal</li>
<li>2 tsp paprika</li>
<li>1 tsp Tony Cachere's Creole Seasoning</li>
<li>Salt and pepper</li>
<li>2 tbsp olive oil</li>
<li>Salsa, for garnish</li>
</ul>
<b>Directions:</b><br />
Mix the cornmeal and spices in a shallow bowl. Dredge each filet, making sure that each side is covered well.<br />

Heat oil in pan. Cook filets in oil until golden brown... about 3-4 minutes on each side.<br />
<br />
Top with a dollop of salsa, and serve.<br />

When I was a kid, my mom saw this <a href="http://www.pamperedchef.co.uk/images/public/uk/recipe_turkey_cranberry_ring.pdf">Turkey & Cranberry Ring</a> recipe at a Pampered Chef party and adapted it to her picky eaters... aka no mayo, mustard, cranberries, or cheese. </div>

Also, I recently had an aha! moment that makes this meal even more efficient... Rob loves fancy Muenster cheese, but he could never finish eating the whole package before it became a science project in the fridge. Solution: stop by the deli and ask them to slice just 3 or 4 slices of the gourmet stuff. I pay about $1.50 for the quarter-pound, and there's not enough left over to spoil and waste.</div>

And I have noticed that I tend to default to the recipes <i>with the fewest number of ingredients.</i> I reject outright any recipes that list out 15 different herbs and spices...even if I have all of them on hand! I really wish recipes would triage their ingredients a bit better and tell you which ones are absolutely essential and which ones you really don't need. Maybe I'll start a trend...<br />

Over the holidays, one of my youth parents told me that she once cooked an entire Thanksgiving dinner using only crock pot recipes. I found that inspiring, because the crock pot has always seemed a little bit daunting (even though every working person alive assures me it's the easiest way to cook!) So, since we still don't have an oven, I thought I'd give it a go. And since we had a bunch of red potatoes leftover from last week, I decided to make potato soup. I searched until I found a recipe written at a beginner level, with a short ingredient list and pictures.<br />
<br />
I have to report that "everyone else" was right. Using the crock pot was extremely easy...and that's coming from someone who once burned a frozen dinner! Jordan took a bite, and made a face that I'd never seen before. "What's wrong?" I asked.<br />
<br />
"This is the best thing you've ever cooked!" he said.<br />

I know that might not be saying much...or maybe it's saying a WHOLE LOT!!<br />

<b>In the morning</b>:</div>

Wash and skin the red potatoes...but don't be too militant about it. The skins add texture, flavor, and nutrients, so leave some on. Cut the potatoes into small cubes, and place in crock pot. Add chicken broth, green onions, and salt and pepper. If you want to add any other vegetables, you can do that too (I added a few chopped mushrooms). Cook on low for 8 hours. </div>

<b>In the evening</b>:</div>

Don't freak out when you look at your mixture and it doesn't look like soup yet. It will! Mash it up to your desired level of lumpiness using a potato masher, or if you don't have one, a spoon. (Guess which one I used?? :)) Add the half and half. Cook on high for 20 minutes. Garnish as desired (we added green onions and cheese, and served with crusty bread). Eat and enjoy!<br />

As a result, all of my New Year's resolutions revolved around cultivating my domestic skills:<br />

So here I go again.<br />

One thing should be noted: we haven't bought an oven yet. So my appliance options are limited to the microwave, George Foreman grill, dehydrator, and crock pot. Strangely enough, this is actually helping me to narrow down my recipe choices!<br />
<br />
Last week, I made grilled pesto chicken. On Monday night, I grilled the whole package; we ate two servings with couscous and a green salad, and I shredded the rest for later in the week. I used the leftovers to make paninis and grilled potatoes (our favorite meal of the week: Tuesday night!) and salad (Friday night!). Super easy, and super versatile!<br />

Rub pesto sauce on the chicken breasts. Marinate in the fridge for 2 hours. Afterward, put the chicken on the George Foreman grill, and cook for about 7 minutes. Cut into the chicken to make sure it is done.<br />

Then put them on the George Foreman grill for about 5 minutes, or until they "look done." (I did not get this exactly right...they were a little undercooked. But I like potatoes in all forms, so it didn't bother me!)<br />

For marinade: <br />
<ul>
<li>2-4 defrosted tilapia filets </li>
<li>1 lime or 1/2 cup of lime juice</li>
<li>1 tablespoon of olive oil</li>
<li>1 1/2 tablespoon of honey</li>
<li>1/2 teaspoon of salt</li>
<li>1/2 teaspoon of pepper</li>
<li>1/4 teaspoon of garlic powder</li>
</ul>
For dredging and cooking:<br />
<ul>
<li>1/2 cup of flour</li>
<li>1/4 teaspoon of pepper</li>
<li>1/4 teaspoon of Tony Chachere's Creole Seasoning</li>
<li>1 tablespoon of olive oil </li>
</ul>
Combine lime juice, olive oil, honey, salt, pepper, and garlic powder in a Ziploc bag.<br />
Add fish filets, and marinate for at least 1 hour.<br />
Just before cooking, combine flour, pepper, and Tony's in a shallow bowl.<br />
Lightly covered both side of the fish filets with the flour mixture.<br />
Heat olive oil in a skillet. When shimmering, add fish filets. Cook each side for 4-5 minutes per side, until browned.<br />

To complete our meal, I served the tilapia filets with white <a href="http://dancingcommas.blogspot.com/2012/07/oven-sweet-potato-fries.html">sweet potato fries</a>, sauteed <a href="http://dancingcommas.blogspot.com/2009/03/our-favorite-green-beans.html">green beans</a>, and fresh rolls. Everything was so yummy... it was difficult to decide which bite to take next. I will definitely be making this again!!<br />

And, I've figured out how to spice up my rice recipe to match the flavors of the rest of the meal! <br />

One of my favorite versions pairs nicely with a Mexican meal. The <a href="http://www.bigoven.com/recipe/172248/Chipotle%27s-Cilantro-Lime-Rice">original recipe</a> called it a copycat recipe of Chipotle's Cilantro Lime Rice; however, my adapted version doesn't taste exactly like that. Dare I say... I actually think it's yummier. <br />

<b>Cilantro Lime Rice</b><br />
<ul>
<li>1 tsp of olive oil</li>
<li>1 lime or 1/2 cup of lime juice</li>
<li>2 tbsp of fresh minced cilantro</li>
<li>1 cup of jasmine rice</li>
<li>1 1/2 cup of water</li>
<li>1/2 tsp of salt</li>
</ul>
Pour olive oil and lime juice in a sauce pan.<br />
Mix rice with the oil and juice... I think that this step is the key! (Sometimes I let the rice "marinate" for over an hour, depending on how long it takes Rob to get home.)<br />
Add water and salt, bring to a full rolling boil.<br />
At boiling, lower temperature and simmer for 15 minutes.<br />
Remove from heat, and stir in the minced cilantro. Let sit for at least five minutes.<br />
Serve and enjoy! <br />

As I mentioned before, I've had a food crush on limes this summer. I bookmarked a recipe for <a href="http://allrecipes.com/recipe/spicy-garlic-lime-chicken/">Spicy Garlic Lime Chicken</a> from AllRecipes.com a few weeks ago. (And, I'm embarrassed to say it even made it on the meal plan a couple of weeks in a row, but was repeatedly pushed aside for other things.)<br />

However, Thursday night was the night! I made the spice mixture and rubbed it on the chicken tenders (shake-and-bake style!) right after work. Then, when Rob got home after his bike ride, basically all I had to do was throw it in the pan.<br />
<br />
I paired the tenders with two of my favorites: mashed potatoes and sugar snap peas. The final product had a wonderful spicy, garlicky, tangy flavor and was especially juicy. My one complaint was that the layers of spices on the top was a little gritty. And, for someone like me who is easily offended by the textures of food, it distracted me from the flavor. Maybe it needed to cook a little longer to get a charred and blackened crust.<br />

Mix together salt, black pepper, chili powder, paprika, garlic powder, onion powder, thyme and
parsley in a gallon-sized bag. Shake spice mixture generously on both sides of chicken tenders.

over medium heat. Saute chicken until golden brown, about 6 minutes on
each side. Sprinkle with garlic powder, lime juice, and chicken broth. Cook 5

I'll probably attempt something similar again, but next time, I will experiment with the spice mixture, either tweaking the spices themselves or blackening the surface. Rob had requested our favorite chicken/apple/spinach salad after he and Thomas rode bikes yesterday, so I needed to find something other than a main dish. <br />

(How can you resist a recipe called "Magic Mango Bread?") I made it earlier in the afternoon, and it was a perfect after-dinner treat.<br />

I decided to half the recipe, given the logistics of only having one loaf pan here at the apartment. The result was a little dry and crumbly--I'm guessing something got a little off in the conversion. But the boys devoured it, going back for seconds, and then having a slice this morning for breakfast.<br />

DID YOU KNOW? My sifter is also stored in a cabinet back in Georgia, so I had to research another way to sift the flour. Turns out that you can also use a whisk to stir and aerate it.<br />

I thought that a <a href="http://allrecipes.com/Recipe/avocado-tomato-and-mango-salsa/detail.aspx">mango salsa</a> would be the perfect complement. It was an easy recipe. Just chop, chop, chop, chop, mix, chill and serve.<br />

And, it was yummy. I loved the avocados and cilantro best, but the mango did add a bit of pizzazz. Luckily, the recipe made enough to top our burritos and as a side dish for chips, plus some leftover.<br />

What a wonderful recipe resource! It was a pretty easy recipe to follow and make. However, it did get a little crazy while trying to get this entree and my side dishes (roasted corn and rolls) all ready at the same time. I was running around my tiny kitchen like a crazy person.<br />
<br />
Broiling was a new way for me to cook chicken though... and one that I will be doing again... maybe even tonight. It was easy and quick! Next time I'll save a little bit more marinade to keep the chicken juicy all the way until the end though. <br />
<br />
It seemed to me that the mango and cilantro topping was a bit of an after-thought in this recipe... just chop, mix, and add on top. Although it was good, it didn't totally mesh with the other flavors of the chicken. I can't wait to try another recipe where the mangoes are more integrated with the meal.<br />

Inspired again by the <i>America I Am </i>cookbook, I went looking for a good succotash recipe. I mean, corn and lima beans are my fave! (My family always laughs about how we're such picky eaters, yet we all love lima beans!) I ended up using this recipe for <a href="http://www.suite101.com/content/vegetarian-succotash-recipe-a62234">Vegetarian Succotash</a> by Jill Harris.<br />

For the other recipes this month I just used frozen corn. However, the other day I decided to "go big or go home," and bought three fresh ears of corn. I had never cut corn off the cob and for some reason was a little nervous. It turned out to be no big deal and made such a difference in the flavor! The fresh kernels added a bit of sweetness that just wouldn't have been there if I had opted for frozen.<br />

I wish that I would have noticed that the original recipe pairs this with quinoa because I've wanted to try that. This time though I paired the veggie side dish with grilled chicken and jasmine rice. <br />

As the comments on the original post mentioned, the lima beans did get a little overcooked, even though I was trying to really watch them (meaning I sampled a lot of limas throughout the process!).<br />
<br />
But overall the dish had wonderful flavor! Rob and I both went for seconds... and we had some leftover. That's the problem with these new recipes... they're hard to size down for two people the first time around. Next time, I'll probably use only two ears of corn and a little bit less than half a bag of lima beans. But, yes, there will be a next time!<br />

However, I'm glad I waited, because although I originally had settled on <a href="http://allrecipes.com/Recipe/corn-pudding-ii-2/detail.aspx">this recipe</a> from AllRecipes.com, yesterday at the library I checked out a cookbook with a corn pudding recipe. The book is called <a href="http://www.passitdowncookbook.com/">America I Am: Pass It Down Cookbook</a> and is filled with "soul-filled recipes" shared by African-American cooks. It feels much more authentic to cook knowing the stories behind the recipes.<br />
<br />
I was introduced to corn pudding by my Aunt Sally, who is one of the best cooks I know. I had tried to make it on my own once before, but I decided it was worth another go in honor of Corn month.<br />
<br />
I mixed all of the ingredients together and then stored the casserole dish in the refrigerator while I tutored from 3:30 to 5:30. I threw it in the oven when I got back to the apartment, and 50 minutes later (10 minutes longer than the original recipe!) I had a batch of corn pudding to complement my pork chops and mashed potatoes.<br />
<br />
The dish was really runny, so we let the excess water drain before spooning it onto our plates. I remember the same thing happening last time, so I don't know if it's supposed to be like that, or perhaps it was melted water from the frozen corn?!? (The AllRecipes recipe actually calls for frozen corn, so I'll have to try that one sometime, too.)<br />
<br />
But, it was yummy. Sweet, but good. And, when Rob opted for another helping instead of getting a brownie for dessert, I knew we had a winner.<br />

As you may have guessed, I'm usually not one to choose a salad over chicken fingers and fries. But this salad was amazing; it had just enough different flavors and textures to keep it interesting. Needless to say I was devastated when the limited time was over--every now and then I'll ask the cashier if they can make it again, but it's been a no-go. I don't know why I hadn't tried to recreate it myself. <br />

But in thinking of my favorite corn recipes, I couldn't get that fire-roasted corn and this salad out of my mind. So last night in true Iron Chef Sisters fashion, I pulled all of the ingredients out on the counter and got started. I found this recipe for the <a href="http://myblessedlife.net/2010/05/pan-roasted-corn.html">roasted corn</a> from My Blessed Life blog. Pretty easy peasy... all ingredients that I usually keep on hand, although because I'm split between two kitchens, I had to restock a couple of the spices. <br />
<br />
I tried to mimic the ingredients from the Roadhouse Zalad as much as I could: I layered spinach and bell peppers in the bottom of the salad shells before adding drained black beans, a spoonful of roasted corn, and grilled mesquite chicken. Just like Zaxby's salad, I topped it off with a sprinkle of potato sticks. The combination was wonderful!! Rob and I thought that the potato sticks on top (while a bit unexpected) provided just enough saltiness to balance the sweetness of the corn, beans and chicken. <br />
<br />
If you look at the last picture below... I promise there is green stuff in there. Although Rob thought that next time, I shouldn't even bother masquerading it as a salad, and just served grilled chicken with a side of roasted corn. Will do!<br />

Unfortunately in faraway places (like Georgia) you can't just head to the freezer section of the store and buy a box of frozen Natchitoches Meat Pies... much less head over to <a href="http://www.lasyones.com/">Lasyone's</a> for the authentic delicacy. For those of you not familiar with this local flavor, let me explain... a Natchitoches Meat Pie is named after a small town in northern Louisiana (pronounced "Nack-a-tush") and is basically a flaky empanada filled with a spicy cajun/creole meat mixture. <br />

And, because Emeril Legasse is the ultimate Louisiana chef, I used <a href="http://www.foodnetwork.com/recipes/emeril-lagasse/natchitoches-meat-pies-recipe2/index.html">his recipe</a> for meat pies as the basis of my meal. However, as I've mentioned before, I am not fond of frying food myself, so I created my own easy version, using refrigerated crescent rolls, instead of Emeril's complicated dough.<br />
<br />
Trying to cook around Rob's cycling schedule can be a challenge, but this recipe fit right in. I was able to make the meat mixture during the afternoon and refrigerated it until evening. When I got his email that he was on his way home, all I had to do was build the pies and bake according to the crescent rolls instructions.<br />
<br />
It took a couple of tries to get the dough to close around the meat. They certainly got prettier as I went along. But it was kind of fun to press the edges with a fork.<br />
<br />
Although the crescent rolls didn't provide exactly the same flavor as the delicate, flaky crust of a traditional meat pie, this combination wasn't half bad. And, my Arizona boy, who didn't know the difference, thought they were quite a hit! He even gave me a high-five! (He's a bit of a dork, too!)<br />
<br />
You should definitely try this recipe out!!! As Emeril would say, "BAM!!"<br />

So Rob and I planned to have Ranch Bacon Burgers last night. Remembering a recipe from my old boss, I threw an egg, Worchester sauce, and a 1/4 cup of oats into the beef mixture before making patties.<br />

Unfortunately though, as I flipped each patty over, it just crumbled all over the pan. Devastation and panic set in. Flashbacks to <a href="http://dancingcommas.blogspot.com/2010/05/tacos-diablos.html">this awful meal</a> (made just over a year ago!). Apparently dinner prep should not be required of teachers in May. <br />

However, Rob was good-natured, suggesting that we make sloppy joes... that is until we realized we didn't have any ketchup. So "crumbled burgers" it was. Paired with a slice (or two!) of avocado and a couple of strips of bacon, I couldn't even really tell the difference. Rob even mixed and melted his cheese in with the crumbles to create a Hamburger-Helper like mixture. It must have been good... he ate two helpings, plus quite a pile of <a href="http://dancingcommas.blogspot.com/2009/03/our-favorite-potatoes-besides-mashed-of.html">homemade baked potato chips</a>.<br />
<br />
I just wish the patties had turned out. Maybe I should have added another egg. Maybe I should have nixed the oats. Maybe I should have used my hands rather than the plastic patty maker. I don't know... I've made burgers just fine before. Made me glad that I used the grill pan on the stove, rather than pulling out the gas grill. Watching all of my crumbles fall through the bars would have caused me to have a major breakdown.<br />

And while I've made tacos millions of times at home, I had never tried to make chimichangas. I'm not so much into frying things by myself.<br />

However, when I ran across this recipe for <a href="http://www.food.com/recipe/quick-and-easy-chimichangas-37272">"Quick and Easy" Chimichangas</a> and saw that they were baked rather than fried, I knew I needed to try it out. And, because Wednesdays are almost the only night of the week that Rob doesn't ride, we planned to try it out tonight.<br />
<br />
The recipe was certainly "easy, but at 50 minutes from start to finish, I wouldn't call it especially "quick." However, I'm sure that's quicker than the traditional recipes.<br />
<br />
The result was eight little golden brown, crispy chimichangas, which I paired with refried beans and tortilla chips. Total success! And, a recipe that I will be making again soon. <br />

Over lunch the other day he brainstormed a menu plan for a month of ground beef. One of his suggestions was "Shepherd's Pie." So last night I gathered my ingredients and set to work. <a href="http://simplyrecipes.com/recipes/easy_shepherds_pie/">This recipe</a> from Simply Recipes served as my inspiration. I used frozen mixed vegetables and added two cloves of garlic to the mix. I also added some flour to thicken the beef broth, and then added cheddar cheese on top of Rob's half of the pie. But otherwise these directions did the trick. <br />
<br />
First off, I learned that the traditional dish of "Shepherd's Pie" should include lamb... when you use beef, it's called "Cottage Pie."<br />
<br />
Secondly, I learned that this recipe makes tons of food. And my husband never backs down from a food challenge... while I had one scoop, he had three double scoops. He ate everything except one "Jana-sized" serving. <br />
<br />
Third, I might be a "meat and potatoes" girl, but this is most definitely a man's meal. Yummy, but extremely hearty. I doubt I'll make this again until I have a brood of boys that I have to feed. It's a little too heavy for my stomach.<br />

Knowing that this would be the last night at home over Spring Break (we left the next day for Ohio), I decided it was now or never for the first Black Bean recipe.<br />

Luckily many of the vegetables I had left over from avocado month were still appropriate for black bean recipes, so I used this recipe for <a href="http://www.seriouseats.com/recipes/2008/01/dinner-tonight-black-bean-tostadas-with-corn.html">Black Bean Tostadas with Corn Relish</a>.<br />
<br />
I chopped all of the veggies and even cooked the meat ahead of time. When Rob got home from work hungry, all I had to do was layer the tostadas and bake for 10 minutes. Must remember this for the summer... especially when Rob comes home after late bike rides. I could have everything all ready in the afternoon, so that it will be done as soon as he gets out of the shower.<br />

The combination of crunchy tostada shell, warm toppings, and cool corn relish was a hit! And I was even able to personalize them for each of us: no cheese for me, please.<br />
<br />
Of course I literally lost the bag of tortilla chips that was going to be our appetizer, so I quickly threw together some rice for the side. Chips would have been better. Of course... chips make everything better.<br />
